There was a moment of hesitation when my husband asked if I would make devils food cupcakes for dessert on Saturday. Normally I am happy to make whatever he asks for, but when I saw that the cake mix called for three eggs, I had to check our egg supply. I found only four eggs in the refrigerator so I told him that I would make the cupcakes if the chickens gave us a couple more eggs that day. I didn’t want to sacrifice my breakfast eggs for cupcakes.
Since I really wanted to fulfill his request, I turned to the internet to see what I might be able to substitute for eggs in a cake recipe. I learned that there are many things that can be used in place of eggs in a cake recipe and with eggs prices as high as they are I thought some of you might find this information useful as well.
Since I still had homemade applesauce in our pantry from last year’s crop, I decided to use it in place of two of the eggs in the recipe – 1/4 cup for each egg.
These cupcakes came out super moist and delicious (sorry I didn’t take any pictures of them). I think I will make this a regular practice.
Have you ever used apple sauce in place of eggs?
I’m no cook or baker Ruth, but I never would have dreamed that applesauce would take the place of eggs – yay you for discovering this fact.

Sometimes the substitutes I come across puzzle me, but then I read about the great recipes that come out of that. I’m glad you were able to have your eggs and eat them, too, so to speak.

I know what you mean. I would never think that some of these substitutions would work well, but can now vouch for apple sauce in cake. Even better – I had my eggs and ate cupcakes too. LOL!

I also have used applesauce in place of oil in baking, but never for eggs. I have however used mashed bananas in place of eggs. I found out that they added a nice flavor to my chocolate chip cookies when I was out of eggs and the cookies were moist and not crumbly.
You are fortunate to have some chicks coming so your egg shortage won’t last too long.

Bananas were my second choice since I had them on hand as well. Bananas in chocolate chip cookies sounds good.

I developed an allergy to eggs (😣😢 and I do so like eggs!), so I culled my sources and came up with several substitutes for baking. Oh No. I would really have a hard time with an egg allergy. Thanks for sharing your sites. We raise our own hens for eggs but right now only have 4 that are laying. They will give me enough for breakfast but when it comes to baking I run short of eggs. The apple sauce was a great choice for me since that also cane from home grown fruit. Our new chicks are scheduled to arrive this week but I don’t expect them to start laying until August.

Sounds delicious, and interesting. I have used applesauce ( and also yogurt) in place of vegetable oil. I didn’t know it would work for eggs as well.

I thought that it could be used for oil (but never tried it). I guess that’s why I was surprised it could be used for eggs.

I have substituted apple sauce for dessert. Does that count? No, it shouldn’t. Shame on me! Nothing should take the place of a real dessert! You are to be commended for making those delicious cupcakes.

Oh yes apple sauce can be a wonderful dessert although I don’t think it will help when you’re craving chocolate.
